Farm to Wok™ is our food philosophy at P.F. Chang's.
Philip Chiang had a deep-rooted appreciation for everything that food stood for: going to the market, spending time with family, a culture of honor and tradition. Philip’s recipes for the first P.F. Chang’s were simple, yet purposeful. He would say to someone ordering Mongolian Beef, “The green onions are not a garnish, everything on the plate is meant to be eaten.”
As the P.F. Chang’s concept grew, these beliefs did not go away. It wasn’t easy to make egg rolls by hand every morning, but it was right. Still today, we’re doing it the right way. We’ve always had this philosophy, but until recently, we hadn’t put a name to it. Now we have.
Farm to Wok™ is the food philosophy that we live by every single day. Our chefs use real, whole ingredients and we make our food and signature beverages from scratch, every day, in every restaurant.
Our food is made from scratch, every day, in our restaurant. Always has been and always will be. Behind every ingredient is a story of where it comes from. The relationships we've cultivated have helped us build an impressive network of farms and culinary experts.
Ingredients are delivered whole to our kitchen, where they are then chopped and sliced according to various recipes. Our recipes are purposefully simple featuring a few, clean ingredients selected for their flavor and their nutritional benefits.
Our restaurant wakes up extra early. The dim sum rollers are among the first to arrive. They roll, fold, and stuff egg rolls, dumplings and wontons by hand, an act of immense skill and love.
We believe in doing everything with intention. Rarely do we use a garnish. Every ingredient used in our recipes is important for texture or flavor.
Our chefs believe in the power of a fiery wok, a 2,000-year-old tradition that is one of the purest forms of cooking. The 700-degree heat cooks food in a matter of seconds to retain its nutritional value.
