Fresco: A Fresh Take On Italian Food

The menu at Fresco is a seamless blend of classic Italian with local products. Although not always on the menu, the Elk Wellington Napoleon was spectacular. The elk served was from a local company based near Tooele. It was served on top of a toasted fennel seed phyllo, which was similar to a puff pastry. On the side was compressed spinach, surrounded by a drizzle of warm huckleberry vinaigrette.
A few delicious courses later I ate “Shepherd’s Pie.” Or so they called it. This play on pub food was a savory, deconstructed lamb shank. It was so moist it just fell apart in your mouth. It was carefully placed in a lamb sugo (which almost had a caramel flavor to it), roasted rapini, parsnip puree with a tomato confit with pine nuts.

To top it all off, my taste buds were blown away by the most amazing s’more of my life. It was created with locally-made and international award-winning Amano Artisan Chocolate, a vanilla marshmallow, graham strudel and a salted caramel gelato. The juxtaposition of salted caramel gelato and the Amano Chocolate was very unique and expertly balanced.
Fresco’s intimate setting and sensational food make it the perfect place for a special occasion. The candle light, white linen table cloths and fireplace make it one of the most romantic spots to have dinner in Salt Lake. And in the summer, there's a patio to relax on while you sip wine as the sun goes down. If you're looking for amazing food and a unique dining experience, you won't be disappointed.
