Café Trio- Cottonwood is a classy and modern Italian restaurant nestled at the bottom of Salt Lake's Cottonwood Canyons. As you walk in you can see the modern style of the restaurant, everything is clean cut and the décor is not overwhelming. During the day, natural light flows through the large windows and makes the restaurant feel warm and inviting.Once you sit down you are presented a menu with so many options that it makes it hard to know where to start! I personally wanted to try them all. Lunch is a great time to go to Trio, you get their amazing menu for a very decent price.Along with their large daily menu they also offer daily specials. On this occasion, I chose their daily sandwich - the vegetarian "Caprese" panini consisting of ciabatta bread, mozzarella cheese, tomatoes, and basil. This sandwich was amazing and perfect. So many flavors and it's such a simple dish. The side salad that comes with it has gorgonzola cheese, grapes, candied walnuts and balsamic vinaigrette.
